| Chablis Grand Cru Bougros from Billaud-Simon comes from a steep site on the edge of the Chablis plateau, where classic Kimmeridgian soils and proximity to the river give both power and salty freshness. Old chardonnay vines yield concentrated grapes, which are gently harvested and aged partly in large oak vessels and partly in used barriques. The bouquet offers ripe citrus, yellow apple and white peach, with flint, chalk and subtle toasted notes. On the palate Bougros is dense and powerful yet deeply mineral, supported by juicy acidity and a creamy texture. Oak flavours are finely integrated and emphasise the wine’s complexity. The very long, chalky and saline finish makes this grand cru a superb partner for lobster, noble fish, scallops and ambitious cuisine. | |
