| Côtes du Jura Tradition from Domaine Rolet blends Chardonnay and Savagnin into a benchmark white from the Jura. Vines on marl and limestone slopes give the wine energy, spice and a distinctive mineral backbone. The bouquet opens with notes of almond, walnut and citrus zest alongside ripe apple and dried herbs. On the palate it is dry, powerful and concentrated, yet lifted by bright acidity. Subtle oxidative tones evoke hints of fino sherry, with iodine and salty nuances stretching into a long finish. This is a serious food wine, ideal with creamy regional dishes, poultry in sauce, mushroom recipes and, of course, mature Comté cheese. | |
