| Yves Cuilleron’s Côte-Rôtie Lieu-dit Bonnivières comes from a steep east-facing slope of mica-schist in Ampuis. The terraces are planted exclusively with Syrah at low yields; the grapes are hand picked, carefully sorted and fermented using traditional methods. The wine is then aged for an extended period in oak barrels, gaining depth, polished tannins and subtle toast. The bouquet combines black cherry, cassis and blackberry with violet, graphite, black pepper and a touch of smoke. On the palate Bonnivières is dense and concentrated yet refined, with firm ripe tannins and cool, schist-driven minerality. A powerful but elegant Côte-Rôtie, perfect with rib-eye steak, rack of lamb, game birds or savoury mushroom dishes. | |
