| Canonico from Castellare di Castellina is a pure Chardonnay from Tuscany, clearly inspired by white Burgundy. Grapes from higher altitude vineyards are fermented and aged in barriques, giving the wine body, structure and the ability to age. The bouquet offers citrus, ripe apple and stone fruit alongside vanilla, hazelnut and subtle toast. On the palate Canonico is creamy yet precise, driven by fresh acidity, good tension and a salty, mineral finish. It is an excellent partner for poultry, veal, rich pasta dishes or flavourful fish recipes. Served slightly cool rather than very cold, it shows all its layers and works just as well at the centre of a meal as it does by the glass. | |
