Cave de Cabrières

With Cave de Cabrières, better known as L’Estabel in Cabrières in the Languedoc, a cooperative stands at the centre of one of southern Frances most distinctive terroirs. The cellar brings together the work of the village growers; the vines lie in a natural amphitheatre on the sunny foothills of the lower Cévennes.

Cabrières has long been marked by three colours and is especially renowned for rosé. The historic vin vermeil has been mentioned for centuries and later carried a royal aura. Across about 380 hectares of garrigue, woodland and schist soils, AOP Languedoc Cabrières and Clairette du Languedoc take on a southern mineral signature.

The strength of the cave lies in the collective: many parcels, old local knowledge, Cinsault, Grenache, Syrah and Clairette, plus the dry spice of thyme, juniper and hot schist. Cabrières tells the Languedoc without excess, but with deep loyalty to landscape.
