Blanco de Silos from Cillar de Silos is a rare white made from Albillo Mayor vines planted at altitude in Ribera del Duero. Sandy, chalk‑influenced soils and cool nights yield grapes that are both ripe and vibrant. Partial ageing on fine lees in barrel adds creaminess and depth. The bouquet offers white flowers, citrus, pear and crisp apple alongside fennel, Mediterranean herbs and a touch of smoke. On the palate Blanco de Silos is concentrated yet refreshing, with a layered texture, lively acidity and a long, mineral, citrus‑tinged finish. It is an excellent match for shellfish, grilled fish, tapas and boldly flavoured vegetable dishes.
In Ribera del Duero, around Quintana del Pidio, Cillar de Silos has been a family bodega since 1994, built on the belief that real finesse comes from a mosaic of small parcels.
