Domaine Pattes Loup

At Domaine Pattes Loup in Courgis, in Burgundy’s Chablis, Thomas Pico began his return to the family estate Bois d’Yver in 2004. In 2005 he took over eight hectares, immediately converted them to organic farming and planted the lieu-dit Pattes Loup that would give the domaine its name.

Chablis here is cool limestone, Kimmeridgian marl, fossil marine soils and elevations reaching around 300 metres. Chardonnay is not simplified by machinery, but hand-picked, understood through low yields and long ripening. Organic certification followed in 2009; Côte de Jouan, Beauregard and other parcels sharpen the profile.

Pattes Loup stands for Chablis beyond industrial severity. Spontaneous fermentation, time on lees, lower intervention and a vital, almost saline expression make the wines a modern yet deeply rooted voice of northern Burgundy.
