Old chardonnay vines yield particularly fine and delicate grapes that are carefully harvested by hand. The wine is aged in a mix of stainless steel and oak to marry complexity with tension. The bouquet offers lemon zest, white flowers and peach, joined by chalk, seashells and a hint of herbal spice. On the palate Les Blanchots is extremely precise, silky and deeply mineral, driven by lively acidity and great finesse. Subtle oak supports the structure without masking the cool fruit.
