Lamy-Caillat
At Lamy-Caillat in Chassagne-Montrachet, in Burgundy, a micro-domaine of unusual radiance began in 2011. Florence Lamy and Sébastien Caillat started with little more than a hectare, focusing on old massal selections of Chardonnay planted at high density in Chassagne and Saint-Aubin.The parcels lie in Chassagne-Montrachet and Saint-Aubin, on limestone, marl and sparse slope soils that ask for precision rather than weight. Oak is kept restrained, new barrels are used sparingly, and the smallest cuvées may see no new wood at all; bottling is careful, often without filtration.
Lamy-Caillat feels like Burgundy spoken in a whisper: tiny quantities, long lees work, gentle élevage and an almost ascetic respect for site. The wines do not seek opulence, but inner tension, that bright line through which Chassagne and Saint-Aubin become clear voices.
