Tokaj Szamorodni Dry from Pajzos is a distinctive, bone-dry expression of the historic Tokaj style. A blend of Furmint, Hárslevelű and Yellow Muscat is harvested with a high proportion of botrytised berries and matured for years in oak under a thin veil of flor. The bouquet opens with dried quince, candied citrus, honey, brown butter and white pepper, joined by nutty, slightly oxidative notes. On the palate the wine is intense yet vivid, driven by racy acidity and a salty, mineral edge. Flavours of dried orchard fruit, toasted nuts and subtle spice unfold sip by sip, leading to a remarkably long, dry finish. Serve lightly chilled with charcuterie, olives, aged cheese or as an intellectual aperitif on its own.

Ageing in French oak enhances the oxidative, nutty complexity and the long, dry character.
