Volnay Premier Cru Les Mitans from Les Parcellaires de Saulx comes from a central vineyard whose name refers to the “middle” of the village. The bouquet is refined and floral, with redcurrant, cherry and rosehip lifted by notes of violet, peony and subtle smoke. On the palate the Pinot Noir is concentrated yet delicate, offering juicy, cool red fruit, silky tannins and vibrant, finely tuned acidity. Hints of spice and discreet toasted oak add nuance without weighing the wine down. A long, mineral-driven finish highlights the graceful, almost hovering style that makes Volnay a beautiful match for roast poultry, veal, lamb or mushroom dishes.
