Following spontaneous fermentation it matures in 500-litre oak barrels on the fine lees, gaining depth and creaminess. The nose reveals exotic fruit, delicate vanilla and subtle toasted notes. On the palate it is full-bodied and dense, with a powerful frame and a long, slightly nutty finish. The interplay of ripe fruit, spice and elegant oak results in impressive complexity.
