For connoisseurs: Cachat Ocquidant Corton Clos de Vergennes from Bourgogne Grand Cru
Clos de Vergennes is a monopole on the Corton hill and delivers a powerful yet finely detailed Grand Cru Pinot Noir. The vines are rooted on mid‑slope marl and limestone soils, which bring concentration, freshness and firm structure. On the nose, dark cherry, blackberry and wild berries mingle with violet, forest floor, graphite and a touch of liquorice. The palate is dense and structured, with plenty of drive, ripe but assertive tannins and a cool, chalky minerality. With aeration, layers of spice, tobacco, cocoa and subtle toasted notes emerge. The finish is long, focused and deep, carried by dark fruit and mineral tension. A serious Corton Grand Cru that excels with braised or roasted beef and lamb, game dishes and mature soft cheeses.
