Castello Bonomi Franciacorta Dosage Zero is a bone-dry Franciacorta that relies entirely on the natural character of its Chardonnay and Pinot Nero blend. After fermentation the wine spends an extended period on the lees before being disgorged without dosage. In the glass it appears pale straw-yellow with a fine, persistent stream of bubbles. The nose reveals white fruit, citrus and floral notes, supported by hints of freshly baked bread, vanilla and subtle herbal nuances. On the palate Dosage Zero is precise, silky and distinctly mineral, with firm acidity and a very dry, long finish. A great choice for purist sparkling wine lovers and a perfect match for oysters, fish carpaccio and delicate vegetable dishes.
