This Extra Brut captures Dhondt-Grellet’s precise, Burgundian-minded approach to Champagne. Chardonnay leads the blend, supported by Pinot Noir from the Coteaux Sézannais and Avenay Val d’Or. Limestone and flint soils bring a firm mineral line and a bright, stony energy. Barrel ageing and a very low dosage keep the style dry, textured and focused. In the glass it is fine, mineral, aromatic and quietly generous rather than showy. Serve it with oysters, shellfish, refined fish dishes or as a serious aperitif.
