Chablis 1er Cru Mont de Milieu from Domaine Billaud-Simon comes from a historic south-facing slope on classic Kimmeridgian limestone. Deep-rooted chardonnay vines draw intensity and a marked mineral character from the fossil-rich soils. The bouquet combines ripe citrus, green apple and white flowers with hints of flint and subtle herbal notes. On the palate this premier cru is concentrated, tense and very precise, driven by fresh acidity and a salty core. Discreet oak ageing adds texture and complexity while preserving the cool fruit profile. The long, chalky-mineral finish makes it a superb partner for fine fish, seafood, oysters and elegant starters.
Extended ageing in stainless steel, with a touch of French oak if needed, builds fullness and aromatic length.
