Domaine Billaud Simon Chablis gc. Les Preuses 2020 0,75l
Chablis Grand Cru Les Preuses from Billaud-Simon is drawn from a breezy upper-slope vineyard with clay-limestone soils that bring both creamy richness and saline tension. Many of the chardonnay vines are old and harvested by hand before ageing in stainless steel and selected oak barrels. The nose is refined, offering white flowers, citrus and white peach alongside mineral, gently iodized notes, a touch of honey and dried fruits. On the palate Les Preuses is silky, layered and powerful, with a succulent, opulent mid-palate balanced by firm acidity. The texture remains creamy without heaviness, while the salty mineral backbone shines through. A long, elegant finish makes this grand cru a superb match for scallops, seafood platters, fine fish dishes and delicate, sauce-based cuisine.
In France—Frankreich—in Chablis, Domaine Billaud Simon carries a lineage that reaches back to 1815—born in the wake of the Napoleonic era and still defined by discipline. Chardonnay is the centre of gravity, rooted in Kimmeridgian limestone where fossils and clay sharpen the sense of place....
The Great Vertical Tasting: A wine through the mirror of time.
Anyone who compares wine across several vintages discovers its development in a particularly impressive way. A vertical tasting reveals how style, maturity, structure and aromas change over time – and helps to find the right vintage for personal taste or a special occasion.
The grape variety: Chardonnay
Chardonnay is a globally renowned white grape from Burgundy, capable of crisp, mineral, creamy or oak-aged styles. Its flavours range from citrus and apple to peach, butter, nuts and toast.
It pairs with seafood, chicken, creamy pasta, mushrooms, lobster and soft cheeses. Chardonnay is exciting because it can be beautifully simple or profoundly complex.
