Chablis 1er Cru Montée de Tonnerre from Domaine Billaud-Simon is regarded as one of the finest premier cru sites facing the grand cru slope. Steep vineyards on Kimmeridgian limestone and marl produce chardonnay of great tension and cool elegance. The bouquet offers lemon, lime and green apple alongside white flowers, chalk and a hint of smoke. On the palate the wine is linear, tight and intensely mineral, driven by vibrant acidity and mouth-watering citrus fruit. Sensitive oak handling polishes the texture and adds an extra layer of complexity. The long, salty and citrus-inflected finish makes this Chablis a superb choice with oysters, seafood, sushi and pure, simply prepared fish.

Ageing in stainless steel preserves the mineral tension and the clear, fresh Chablis character.
