Chablis 1er Cru Vaulorent from Domaine Billaud-Simon is sourced from a cool slope that borders the grand cru hill, where classic Kimmeridgian limestone and clay deliver salty tension. Most of the chardonnay vines are old and deeply rooted, and the wine is raised mainly in stainless steel with a small proportion in oak to add texture and finesse. The bouquet offers lemon, pear and white peach alongside chalk, seashells and a faint smoky note. On the palate Vaulorent is intense and compact yet very cool in style, driven by vibrant acidity and crystalline minerality. Discreet oak remains in the background and gently frames the precise fruit. The long, saline and citrus-laced finish marks this premier cru as a fine terroir wine for top-quality fish, shellfish and pure, simple cuisine.
