Chablis Grand Cru Les Blanchots from Billaud-Simon comes from one of the appellation’s most revered sites, with steep slopes and pale, limestone-rich soils. Old chardonnay vines yield particularly fine and delicate grapes that are carefully harvested by hand. The wine is aged in a mix of stainless steel and oak to marry complexity with tension. The bouquet offers lemon zest, white flowers and peach, joined by chalk, seashells and a hint of herbal spice. On the palate Les Blanchots is extremely precise, silky and deeply mineral, driven by lively acidity and great finesse. Subtle oak supports the structure without masking the cool fruit. The long, finely saline finish makes this grand cru an exceptional match for refined fish dishes, caviar, shellfish and festive menus.

Ageing for 15–18 months in stainless steel preserves mineral clarity and carries the dense, opulent structure.
