Chablis 1er Cru Les Vaillons from Billaud-Simon comes from a relatively warm slope on the left bank of the Serein, where Kimmeridgian limestone soils produce ripe yet finely balanced chardonnay. Grapes are harvested by hand and the wine is aged mainly in stainless steel with a small proportion in oak to round the edges. The bouquet shows lemon zest, lime and white peach alongside herbal notes, chalk and a hint of brioche. On the palate Les Vaillons is supple, juicy and inviting, with ripe fruit, clear acidity and a savoury, salty minerality. It feels slightly richer and more charming than the strictest sites, while retaining precision and coolness. The long, fruit-driven and mineral finish makes this premier cru a versatile choice with fish, seafood, poultry and refined vegetable dishes.
The wine ages for 14–16 months in stainless steel, with a touch of French oak if needed, supporting freshness and aromatic length.
