Chablis Grand Cru Vaudésir from Billaud-Simon combines parcels on both east- and west-facing slopes, bringing together perfumed richness and cool, mineral drive. Chardonnay vines grow on steep, poor Kimmeridgian soils and are entirely harvested by hand. The bouquet reveals white flowers, apricot and pear alongside citrus zest, chalk and a touch of honey. On the palate Vaudésir is full-bodied, supple and layered, with ripe fruit, lively acidity and fine, granitic minerality. Its structure is powerful yet always balanced and graceful. The long, floral and saline finish makes this grand cru a magnificent choice for refined fish dishes, shellfish and sophisticated, Asian-inspired cuisine.

Fourteen to sixteen months in stainless steel support the clear structure and lively acidity of the Grand Cru.
