Domaine Rolet Arbois, Vin Jaune – An experience for true connoisseurs
Arbois Vin Jaune from Domaine Rolet is a benchmark example of the Jura's great oxidative white wine. Made from 100 percent Savagnin, it ages for many years under a veil of yeast in oak barrels, developing its distinctive character. The bouquet is intense and complex, with walnuts, almonds, curry spice, dried fruit and hints of forest floor. On the palate the wine is powerful, dry and concentrated, driven by firm acidity and remarkable depth. Its savory spice and pronounced nutty notes make Vin Jaune a true wine for slow contemplation. It is traditionally served with veal in creamy morel sauce, rich fish dishes or mature Comté cheese, and it has outstanding capacity to age further in bottle.
