Domaine Cambrian Shiraz, La Pléiade, Heathcote: The essence of true craftsmanship
Domaine Cambrian La Pleiade Shiraz is grown in Heathcote on ancient, deep-red Cambrian soils that are famed for giving structure and minerality. A joint project between Jasper Hill and M. Chapoutier, it is crafted with gentle extraction, long maceration and ageing in French oak. The bouquet is intense and refined, showing blackberry, blueberry and dark cherry with violet, pepper, liquorice and hints of graphite. On the palate the shiraz is powerful and concentrated yet poised, with generous fruit, ripe fine-grained tannins and cool spice. Vibrant acidity and a strong mineral backbone provide remarkable length and cellaring potential. This distinctive red is a natural match for braised lamb, beef, game dishes, grilled vegetables and mature hard cheeses.
