| Pinot Noir XXX from Holger Koch represents the pinnacle of his Kaiserstuhl reds. Vines rooted in cool, breezy sites on loess and volcanic soils are planted with fine Burgundian clones. Only rigorously selected fruit reaches the cellar, where a portion is fermented as whole berries with native yeasts. Maturation in wooden barrels adds depth and spice while preserving the wine s elegant, linear profile. Aromas of red berries, sour cherry, rosehip and subtle smokiness rise from the glass.
