This Pinot Noir from Holger Koch grows in a small terraced site on the Kaiserstuhl where the cool exposition lends remarkable finesse. French Burgundian clones, naturally low yields and selective hand harvesting deliver highly concentrated fruit. Fermentation with a share of whole bunches in open wooden vats and maturation in used barrels shape an expressive yet finely etched style. The bouquet reveals raspberry, ripe plum, subtle dried herbs and a hint of truffle and smoke. On the palate the wine is silky, deep and precise, driven by fine grained tannins and cool, stony freshness. It is an outstanding partner for game birds, veal, mushroom dishes and refined contemporary cuisine.

After open wooden-vat fermentation with a proportion of whole bunches, the Pinot Noir was aged in small used oak barrels.
