Pinot Noir XXX from Holger Koch represents the pinnacle of his Kaiserstuhl reds. Vines rooted in cool, breezy sites on loess and volcanic soils are planted with fine Burgundian clones. Only rigorously selected fruit reaches the cellar, where a portion is fermented as whole berries with native yeasts. Maturation in wooden barrels adds depth and spice while preserving the wine s elegant, linear profile. Aromas of red berries, sour cherry, rosehip and subtle smokiness rise from the glass. On the palate it is silky, energetic and layered, with precise tannins and cool, mineral driven length. A serious Pinot Noir for festive tables and thoughtful food pairings.

Fifteen months in 300-litre barrels give the wine structure, harmony and finely developed elegance.
