Kopos Madeira is a classic fortified wine from the Portuguese island of Madeira and is widely used in cooking. Its particular maturation gives it intensity and great stability. The nose reveals nuts, dried fruits, caramel and subtle roasted tones. On the palate it is spicy, powerful and slightly oxidative in style, with balanced sweetness and lively acidity. It is ideal for deglazing roasting juices, enriching sauces for game, liver or mushroom dishes and for savoury reductions. Served on its own, it also works beautifully as a characterful aperitif or digestif.
