Penfolds Bin 389 Cabernet Shiraz is often dubbed “Baby Grange”, marrying Cabernet Sauvignon structure with the richness of Shiraz sourced from classic South Australian regions. The bouquet shows dark berries, cassis and blueberry, layered with dried herbs, leather, tobacco and a touch of mint. On the palate the wine is concentrated yet polished, with ripe fruit, fine-grained tannins and balanced acidity. Notes of mocha, dark chocolate, spicy oak and earthy nuances add complexity as the wine evolves in bottle. A distinctive Australian red to enjoy with beef, lamb or slow-cooked dishes.
Ageing for 14 months in new and used American oak shapes maturity, spice and a firm structure.
