Verdejo

Verdejo is one of Spain's most important white grape varieties and the signature grape of Rueda in Castilla y León. It produces dry white wines with vivid citrus fruit, herbal lift, fennel, stone fruit and a gently bitter freshness on the finish.

Modern Verdejo is usually crisp, aromatic and refreshing, often made in stainless steel to preserve brightness. Better examples can also show texture, lees complexity and a distinctive savoury edge that makes the grape more than just a simple summer white.

What does Verdejo taste like?

Verdejo often tastes of lime, lemon, grapefruit, green apple, peach, fennel, bay leaf, fresh herbs and sometimes a light almond note. Its aromatic profile is expressive but usually less grassy than Sauvignon Blanc.

The palate is dry, fresh and medium-bodied, with lively acidity and a slightly bitter, appetising finish. Lees ageing or old vines can add creaminess, spice and extra length without hiding the grape's bright core.

Where does Verdejo come from?

Verdejo is most strongly linked to Rueda in north-western Spain, where it has become the region's defining white variety. Rueda's high plateau, cool nights and sunny days help retain aroma and acidity.

The grape is also planted in other parts of Spain, but its clearest identity remains tied to Rueda. It is often bottled as a varietal wine and may also appear in blends with Sauvignon Blanc or other permitted white grapes.

Which styles of Verdejo are there?

The best-known Verdejo style is fresh, dry and aromatic, with citrus, herbs and crisp acidity. These wines are usually unoaked and designed for immediate drinking, making them excellent aperitif whites.

There are also more textured Verdejo wines from older vines, lees ageing or barrel fermentation, which show greater body and savoury complexity. Traditional oxidative styles exist historically, but modern Rueda is best known for bright, clean dry whites.

What food pairs with Verdejo?

Verdejo pairs beautifully with tapas, grilled prawns, calamari, white fish, sushi, ceviche, salads, asparagus, goat cheese and herb-led vegetable dishes. Its citrus and fennel notes are especially good with Mediterranean flavours.

Fuller styles can handle roast chicken, creamy seafood pasta, rice dishes and mild cheeses. The grape's freshness also makes it useful with fried starters, where acidity cuts through richness.
