This Blanquette de Limoux gives the local Mauzac grape a remarkably pure, distinctive voice. It is made entirely from Mauzac, with no sugar added during vinification, bottle fermentation or dosage. Extended ageing on the lees brings depth to its fine, persistent stream of bubbles. The bouquet layers citrus, fresh apple and hawthorn with a subtle fennel-like herbal note. On the palate it is straight, airy and exact, yet rounded enough to avoid austerity. Mineral tension carries the wine into a long finish marked by crisp green apple. It makes a refined aperitif and a precise partner for oysters, shellfish, ceviche or delicate white fish.
