Vin Santo di San Niccolò from Castellare di Castellina is a traditional dessert wine from the Chianti Classico area, made from white grapes that are dried on racks before pressing. After fermentation it ages for several years in small wooden casks, developing impressive richness and complexity. In the glass it shows a bright amber colour; the nose reveals dried fruits, honey, caramel, nuts and candied orange peel. On the palate the wine is sweet but never cloying, balanced by fresh acidity, a creamy texture and a very long finish. It is a classic match for Tuscan cantucci and other almond pastries, and also pairs beautifully with blue cheeses and nut-based desserts.
