| M. Chapoutier Ermitage L’Ermite Blanc comes from a stark granite summit surrounding the chapel of Saint-Christophe on the Hermitage hill. High-altitude marsanne vines are farmed biodynamically and harvested by hand, then the wine is largely aged in new barrels. The nose offers citrus, white peach and ripe orchard fruits alongside almonds, honey, smoke and a striking stony minerality. On the palate L’Ermite is powerful, dense and yet remarkably precise, with firm structure, fine acidity and a gentle bitterness on the finish. Its huge, multilayered length makes it a monumental and ageworthy Ermitage, ideal for lobster, refined fish dishes, risotto, white meats and high-end cuisine. | |
