M. Chapoutier Ermitage Le Pavillon Rouge is sourced from the steep granite slopes of Les Bessards, planted with extremely old syrah that yields tiny crops of intensely flavoured grapes. Long ageing in oak barrels shapes one of the domaine’s most iconic wines. The nose is deep and complex, with blackberry, cassis and raspberry wrapped in tar, smoke, walnuts, licorice and crushed rock. On the palate Le Pavillon is monumental yet balanced, combining huge concentration with velvety tannins and vibrant mineral drive. The finish is very long, smoky and spicy, marking this as a cellar-worthy Hermitage to accompany mature beef, game, truffle dishes and powerful cheeses.
