M. Chapoutier Occultum Lapidem Blanc from the Roussillon is sourced from poor schist and granite soils around Latour-de-France. The organic blend of grenache blanc, grenache gris and vermentino is harvested by hand. The bouquet delivers stone fruits such as apricot and peach alongside citrus, white pepper, subtle toast and a smoky mineral edge. On the palate the wine is both fresh and creamy, with generous white-fleshed fruit and a touch of vanilla. Lively acidity and a long, salty finish give tension and drive. This characterful southern French white is an excellent match for grilled fish, poultry, vegetable tarts and Mediterranean dishes.
