M. Chapoutier Chrysopée Bila-Haut Collioure Rouge comes from dramatic terraced vineyards above the Mediterranean in the Roussillon. This organic blend of grenache and mourvèdre is rooted in schist and gneiss soils that lend marked salinity and minerality. The bouquet combines black cherry, blackcurrant and fig with garrigue herbs, hints of leather and a touch of smoke. On the palate the wine is dense, juicy and powerful, with ripe, gripping tannins and a fresh, maritime edge. A long, spicy and slightly salty finish gives Chrysopée real character and food affinity. It is a superb match for lamb, grilled meats, slow-cooked dishes and intensely flavoured Mediterranean cuisine.
