M. Chapoutier V.I.T. Côtes du Roussillon Villages Rouge is a biodynamic blend of grenache and syrah from old vines planted on high, windswept sites around Latour-de-France. The vines grow on poor granite and limestone soils, producing small berries packed with flavour. The bouquet is intense, with blackberry jam, black cherry and cassis framed by garrigue herbs, licorice, smoke and roasted pepper. On the palate V.I.T. is full-bodied and dense yet surprisingly refined, showing silky ripe tannins and a core of fresh acidity. A long, spicy, mineral finish highlights its impressive ageing potential. This is a serious Roussillon red to serve with braised lamb, beef, game, roasted root vegetables and hearty stews.
