Château de Fargues, owned by the Lur Saluces family, is one of the reference estates in Sauternes. The vineyard covers about 18–20 hectares planted with roughly 80% Sémillon and 20% Sauvignon Blanc on clay‑limestone, sand and gravel soils. The grapes are picked by hand in several passes to select perfectly botrytised berries, then fermented and aged in oak barrels for close to 30 months. The bouquet is packed with candied citrus, apricot and pineapple alongside acacia honey and subtle spice. On the palate Château de Fargues is rich and creamy yet lifted by vibrant acidity, finishing very long and precise – a noble sweet Sauternes built for long ageing.
