Sémillon

Sémillon is a classic white grape from south-west France and one of the key varieties of Bordeaux. It is important for both dry white blends and some of the world's great sweet wines, especially in Sauternes and Barsac.

The grape can seem subtle when young, with citrus, apple, wax and herbs, but it develops honey, toast, lanolin and nutty complexity with age. Hunter Valley in Australia is another famous region for long-lived, dry Sémillon.

What does Sémillon taste like?

Young Sémillon often shows lemon, green apple, pear, hay, wax and gentle herbs. With age it can develop honey, toast, nuts, lanolin, beeswax and dried citrus while retaining a firm savoury line.

Acidity is usually moderate rather than piercing, and texture is a major part of its appeal. Sweet botrytised styles add apricot, marmalade, saffron, honey and great concentration.

Where does Sémillon come from?

Sémillon comes from south-west France and is deeply associated with Bordeaux. In dry white Bordeaux it is often blended with Sauvignon Blanc; in Sauternes and Barsac it is the dominant grape behind noble sweet wines.

Australia's Hunter Valley has created a very different benchmark: light-bodied, unoaked dry Sémillon that can age for decades. The variety is also grown in South Africa, Chile, California and other regions.

Which Sémillon styles are there?

Dry Sémillon can be lean, citrusy and age-worthy, especially in Hunter Valley, or richer and textured in Bordeaux blends with Sauvignon Blanc. Oak and lees can add breadth and complexity.

Sweet Sémillon affected by noble rot is central to Sauternes and Barsac, producing honeyed, long-lived dessert wines. The grape is also used in blends where it contributes body, texture and ageing potential.


What food pairs with Sémillon?

Dry Sémillon pairs with roast chicken, white fish, shellfish, crab, pork, creamy sauces, mushrooms, asparagus and soft cheeses. Mature dry bottles are excellent with richer poultry and nutty flavours.
