| Com Tu is crafted in the mountain village of La Figuera in Montsant and pays tribute to old garnacha vines rooted in pale clay-limestone soils. The vineyards are farmed organically, harvested by hand and worked gently in the cellar. Longer macerations and ageing in concrete and large wooden vats build depth while preserving freshness. The nose offers red berries, cherry and ripe plum alongside violets, Mediterranean herbs and a touch of graphite. On the palate Com Tu is juicy, concentrated and refined, with silky tannins and a cool, chalky mineral backbone. The long, spicy-mineral finish makes it a beautiful match for lamb, slow-cooked stews, game dishes and flavourful vegetarian cuisine. | |
