Domaine Billaud Simon Chablis 1c. Fourchaume – A true delight from France
Puligny-Montrachet from Domaine Bachelet-Monnot is sourced from stony, limestone-rich vineyards that define the great whites of the Côte de Beaune. Hand-picked chardonnay is gently pressed, fermented in oak and aged partly in barrel and partly in stainless steel to balance freshness and complexity. The bouquet offers citrus, green apple and white flowers alongside hints of peach, hazelnut and a touch of flinty smoke. On the palate the wine is precise and tightly focused yet creamy in texture, driven by salty minerality and lively acidity. Subtle oak gives structure and depth while allowing the pure fruit to shine. The long, tense finish confirms this Puligny as a refined partner for fine fish, shellfish, poultry and sophisticated vegetable dishes.
