Chablis Grand Cru Les Clos from Domaine Billaud-Simon comes from one of the most revered slopes in Chablis, with ideal south-facing exposure and poor Kimmeridgian limestone soils. Old chardonnay vines yield concentrated grapes that are gently harvested and matured in a mix of stainless steel and oak. The bouquet reveals lemon and grapefruit zest, white peach and pear, framed by chalk, flint, almonds and a hint of honey. On the palate Les Clos is powerful, dense and tightly focused, driven by racy acidity and pronounced saline minerality. The texture is creamy yet sinewy, layering citrus, stone fruit and subtle spice. A very long, chalky and salty finish points to impressive ageing potential and makes this grand cru a superb match for lobster, fine fish and refined gastronomy.

The wine ages for 15–18 months in stainless steel, revealing a powerful, clearly mineral Grand Cru profile.
