From the Alpine village of Fläsch in Graubünden, this Pinot Noir combines depth with striking precision. Marta and Daniel Gantenbein harvest by hand, then ferment the fruit in custom-built open wooden vats. A modest proportion of whole clusters adds shape and aromatic lift. The wine matures for 12 to 14 months in barriques before being bottled unfined and unfiltered. Its character is poised rather than showy, with fine red fruit, mineral tension and a savoury, saline edge. The palate feels concentrated yet fresh, with a focused, elegant line. It is especially convincing alongside duck, veal, mushrooms or refined game dishes.
