This Brut Nature expresses the artisanal, precise side of the Montagne de Reims. Gaspard Brochet works in Écueil with Pinot Noir, Chardonnay and Meunier from a small organically certified estate. With no added dosage, fruit, chalk and structure are presented with notable clarity. The nose combines citrus, white apple, pale flowers, brioche and a saline mineral tone. On the palate it is dry, lively and finely textured, with brisk acidity and a focused core of fruit. It is excellent with oysters, sashimi, poultry terrine or a refined aperitif. For purist grower Champagne, Vinofant offers a bottle with tension, finesse and character.
