KOPOS Sherry Fino Neu originates from Andalusia, where a dry white base wine from Palomino grapes is fortified with brandy. The pale, delicate wine offers notes of green almond, fresh yeast, dried herbs and a fine salty breeze. On the palate it is bone-dry, lively and very precise, with subtle nuttiness and a crisp, savoury finish. In professional kitchens Fino is prized for seasoning fish soups, shellfish, Asian dishes and tapas. It also pairs beautifully with asparagus and light meats or can be served chilled as an aromatic aperitif. Thanks to its dry, savoury style it can also lift simple pan sauces to a new level.
