Dido Blanco from Venus La Universal is an organically farmed white from Montsant, based on Macabeo, Garnacha Blanca and Xarel·lo from old vines on granite and slate. The nose opens with white and yellow fruit, citrus zest, hints of tropical fruit, Mediterranean herbs and a touch of brioche. On the palate it is fresh, vibrant and gently mouthfilling, driven by juicy fruit, salty minerality and lively acidity. Subtle oak adds toasted nuances without weighing the wine down. The long, dry finish underlines its gastronomic profile. A layered Mediterranean white that shines with grilled fish, roasted vegetables or tapas with olive oil and herbs.
Ageing on the lees in barrels and foudres, followed by a cement phase, gives this white wine creaminess and poise.
