The bouquet is complex, with ripe plum and cherry, garrigue herbs, black pepper and a touch of cardamom. On the palate the wine is full-bodied and dense, yet velvety, with well-integrated tannins and juicy acidity. Flavours of dark berries, spiced brioche, liquorice and subtle smoke add depth. The structure is powerful but balanced, leading to a long, spicy, fruit-driven finish. La Gille pairs beautifully with lamb, slow-cooked beef, game dishes or mature cheeses.
