Domaine du Bouchot Pouilly-Fumé MCMLV is produced from biodynamically farmed Sauvignon Blanc and is conceived as a pure expression of its limestone and flint terroir. The bouquet delivers gooseberry, citrus fruit and yellow stone fruit, joined by freshly cut herbs and a smoky flint character. On the palate the wine is concentrated yet taut, with juicy fruit, herbal spice and a clearly defined, chalky structure. The acidity is ripe and precise, carrying the flavours into a long, vibrant finish. Citrus, bright fruit and a pronounced but elegant minerality remain on the palate. A complex Pouilly-Fumé that pairs beautifully with oysters, fine fish dishes and refined vegetable cuisine.
