| Domaine du Bouchot Pouilly-Fumé Terres Blanches comes from clay-limestone “terres blanches” soils and shows a slightly richer, more textural side of Sauvignon Blanc. The bouquet offers citrus fruit, yellow apple and hints of grapefruit zest, alongside a salty sea-breeze impression, oyster shell and gentle kitchen herbs. On the palate the wine is mineral and compact, with ripe acidity, fine-grained structure and a subtly creamy mouthfeel. Cedar-like citrus notes and a touch of white pepper add tension and spice. The finish is long and crystalline, often described as “liquid stone”, a hallmark of these soils. An elegant, multi-layered Pouilly-Fumé that pairs beautifully with fish, shellfish, fine seafood and goat’s cheese. | |
