Quatre Temps from Domaine Cauhapé is a dry Jurançon made in equal parts from petit and gros manseng, striking a fine balance between richness and freshness. The grapes come from steep slopes overlooking the Pyrenees and are left to ripen for a long time before careful hand-picking. The bouquet is intense and precise, with white flowers, exotic fruit, citrus and ripe yellow peach, complemented by hints of dried fruit. On the palate Quatre Temps is structured, juicy and focused, its lively acidity wrapped in a creamy texture from extended lees ageing. It moves gracefully between power and tension, finishing long with salty, mineral notes. This elegant white pairs beautifully with fish, white meats, Asian-inspired cuisine and flavourful cheeses.
After fermentation in used barrels, the wine ages for 8 months in barrel and then for 12 months on fine lees in tank.
